Quick & easy Korean-style beef

A very easy and quick dinner to put together and with all the punching flavours of Korean beef - for when you really don't have time to marinate it!

Accompanied with some white rice & boiled greens.

I do really LOVE the unmistakable flavour of Korean bbq marinade. To me this is the perfect combination of sweet, tangy, sticky & spicy. Very often however, I just simply don't have the time to marinate the meat for hours and hours to infuse the taste; I am a rather spontaneous cook, so this is often an issue I wrestle with.

For this recipe I decided to try use the marinade in the pan directly and whilst I will be the first to admit that the marinade infuses more flavour, this is a perfectly good option for when you are in a rush.


Yields 2 dinner portions

Ingredients:

For the sauce:


- 45g of brown sugar

- 60 ml of soy sauce (I used the reduced salt version)

- 2 tablespoon of sesame oil

- 1/2 teaspoon of chilli flakes

- 1/2 teaspoon of ground ginger


For the beef cooking:


- 400g of diced beef

- 1 tablespoon of olive oil

- 3 cloves of garlic (minced or finely chopped)

- 3 spring onions sliced (plus a little extra for garnish if you wish)

- a handful of sesame seeds (optional)

Method:

Combine all of the sauce ingredients in a bowl and set aside.


Heat up the olive oil in a large frying pan. Once the oil is hot, add the garlic and gently fry for about a minute stirring frequently to avoid burning.


Add the beef to the pan and cook until brown for about 4 minutes.


Add the sauce to the pan from your bowl and stir in chopped green onions.


Reduce lightly on heat for a couple of minutes whilst stirring. Once the meat is cooked and coated, remove from heat and serve with some garnished raw spring onion and a sprinkle of sesame seeds.


With diced beef, ensure you do not overcook the meat as the result will be rather chewy and tough.

Some extra tips


If you have the time and are a much better pre-plan cook than me, then you could marinate your meat in the Korean bbq sauce for a few hours or even overnight.

Remember to always marinate your produce in the fridge to avoid bacteria formation.

I use clingfilm to cover the top of my bowl and lock in more flavour.
